Week Fifteen: Carrot and Cheese Wraps
Carrot & Cheese wraps
Ingredients
• Grated carrots (around 3 parts carrot)
• Grated cheddar cheese (around 1 part cheese)
• 2 eggs
• Salt & pepper
Save the carrot tops to make a lovely carrot-top chimichurri (see recipe in Week 9).
Method
1. Preheat the oven to 180°C.
2. Grate the carrots and cheddar cheese. Mix together in a bowl, keeping the ratio of 3 parts carrot to 1 part cheese.
3. Add the eggs, season with salt and pepper, and mix until well combined.
4. Line a baking tray with parchment paper. Spoon the mixture onto the paper, spreading it into thin circles.
5. Bake for around 30 minutes, until golden with edges starting to turn crispy.
Serving Suggestions
Serve with salad leaves, a crispy fried egg, and carrot-top chimichurri or simply enjoy them on their own as a tasty snack!
