Week Five: Herby 'n' humble New Potato salad

Herby potatoes with homemade silky mayonnaise - made in just 2 minutes! 

For the potatoes:

– Boiled new potatoes (skin on for extra nutrients!)

– Chopped spring onion 

– Dill 

– Capers 

– Salt, pepper & a knob of salted butter 

For the mayo:

– 1 whole egg 

– Light olive oil (or any subtle oil) 

– Dijon mustard

– Lemon juice (or vinegar)

– Salt & pepper 

Blend with a hand blender until smooth and silky. Poor generously over your herby spuds for the ultimate dunking experience
