Week Eight: Beetroot Burgers

These beetroot burgers are bloody satisfying and super simple to throw together! 

Sauté spring onion (or any onion) until golden. 

Add curry powder and a splash of water so it doesn’t burn. 

Stir in grated beetroot and cook for a few minutes. How soft is up to you but I like a little bite. 

In a bowl, combine:

• The cooked beetroot mix

• Ground nuts/seeds (use a blender to blend into a rough powder - sunflower, pumpkin, cashews, almonds, whatever’s on hand)

• 1 egg

• Salt & pepper

Mix, shape into patties, and lightly fry until golden.

Thanks to my dear friend Anna for this one, she swears by serving them with delicious MAYONNAISE. A tahini + ginger dip also goes down a treat.
