Week Six: 'No noodles' noodle salad!

(A crunchy, slurpy, rainbow bowl of deliciousness)

Base:

– Shredded cabbage 

– Peeled ribbons of courgette & carrot

– Chopped spring onion 

Dressing:

Whisk together:

– Sesame oil 

– Grated garlic & ginger 

– Soy sauce 

– Miso 

– Tahini 

– Fish sauce (if you’re into it)

– Fresh lime juice 

– Splash of water (especially if it thickens or splits)

To Finish:

Top it all with:

– Toasted sesame seeds 

– Fresh coriander 

– Extra lime wedges 

Serve it up with:

– Quinoa 

– Crispy fried egg 

– Crispy chilli oil 

– Or whatever you fancy, fried tofu, fish
